Chipotle Black Bean Burger

Luckily, today I went to the grocery store and it was almost back to normal, almost. I’m super grateful to the employees at the grocery store that were scrambling to bring back a sense of normalcy, even though COVID-19 has created a new normal. However, I wrote this recipe for Chipotle Black Bean Burgers after shopping last Monday at the height of the panic-induced food shortage.

All of the ingredients in this recipe I purchased during the food shortage when 50% of the shelves were bare. And although it is a simple recipe, it is one that we love and make often.

We’ve been making these Chipotle Black Bean Burgers for quite some time. Not only do they have great flavor, but great texture as well. Not soft and mushy like a lot of black bean burger patties, these hold up to being bitten into, or even picked up with a fork through the top. Suitable for baking, pan-frying, or even cooking on the grill.

The secret to truly great Black Bean Burgers I learned from a food blog called Serious Eats. Roasting the canned beans prior to making patties dehydrates them slightly. This helps bind the mixture making them hold together more like a beef hamburger patty would.

Mixing cheese, sautéed onions, and peppers keep the burger moist and flavorful. Topped with Monterey or Pepper Jack cheese and guacamole, these Chipotle Black Bean Burgers are a great healthy vegetarian alternative to a beef burger.

Chipotle Black Bean Burgers

We’ve been making these Chipotle Black Bean Burgers for quite some time. Ingredients

  • 2 Teaspoons Olive Oil
  • 1 15-Ounce Can Black Beans
  • 1/4 Cup Jalapenos Seeded, finely diced
  • 1/2 Cup Onion Diced
  • 2 Teaspoons Garlic Crushed and chopped
  • 2 Tablespoons Chipotle Peppers in Adobo
  • 1/4 Cup Monterey Jack Cheese Shredded
  • 1/4 Cup Bread Crumbs
  • 1 Egg
  • 1 Teaspoon Ground Cumin
  • 1/2 Teaspoon Chili Powder
  • 1 Teaspoon Smoked Paprika
  • 1 Teaspoon Salt

Garnish

  • Pico de gallo
  • Guacamole
  • Monterey Jack Cheese Shredded
  • Whole Wheat Buns

Instructions

  • Preheat oven to 350F
  • Drain and rinse black beans, spread them out evenly on a sheet tray and roast for approximately 12 minutes. Remove from the oven and add them to the food processor
  • Increase oven to 375F
  • While beans are roasting, heat a skillet over medium-high heat. Add olive oil, onions, jalapenos to the skillet and sautee until slightly browned, add garlic for 1-minute at the end
  • Combine all ingredients in a food processor and pulse until combined
  • Divide mixture into 4-patties, these can be refrigerated or frozen for a later date.
  • Place the patties on a sheet tray lined with parchment that has been sprayed with cooking oil, place in the preheated oven and bake for 10-minutes. After 10-minutes turn the burgers and add cheese to the top. Return to the oven and bake for an additional 10-minutes.
