Vegan Date Nut Balls

Sweet, crunchy and healthy, these Vegan Date Nut Balls are a little jolt of energy. A perfect little pick me up, they’re loaded with all natural ingredients and are quick and easy to make.

Vegan Date Nut Balls

Ideal for a pre-workout, pre-game or that 2 o’clock afternoon energy slump at work or school. The recipe is quick and easy to make, and there are about a million different ingredients you can substitute to personalize them to your particular taste.

Pro Tip: Put the chopped pistachios for the coating through a sieve after chopping. Any time you roll something like these Vegan Date Nut Balls or a Chocolate Truffle in chopped nuts, you’ll have a fine powder and larger chunks. Running them through a sieve separates the two and gives you the option of what look you want. I wanted the chunky look, so after I sieved the pistachios, I put the powder into the energy balls so I didn’t waste it.

Here’s my Vegan Date Nut Balls recipe:

INGREDIENTS:

  • ½ Cup Pistachios, finely chopped
  • ½ Cup Rolled Oats
  • 1 Cup Almonds, finely chopped
  • 1 Cup Unsweetened Coconut
  • 2 Cups Dates, pitted
  • 3 Tablespoons Coconut Oil
  • 1 Teaspoon Salt
  • 2 Tablespoons Honey

FOR COATING:

  • 1 Cup of Pistachios, Roughly Chopped

PROCESS:

-Place 1 cup of pistachios in a food processor (or chop by hand) and set aside, this is for rolling afterward.

-Use a sieve to separate the chunks from the powder

-Add the remaining ingredients (with the pistachio powder) and process briefly until the mixture comes together

-Refrigerate for 30 minutes

-Use a small ice cream scoop to form balls of the batter. Have a small bowl of coconut oil ready and keep the palms of your hands moist as you roll the dough into balls, this helps the pistachios stick better

-Roll the balls in the chopped pistachios,

-Will keep in the refrigerator for 2 weeks
