Taco Filling
- 1 Pound Turkey -Ground
- 1/2 Cup Onion -Diced
- 1 Teaspoon Garlic -Crushed and chopped
- 1 15 Ounce Can Black Beans -Drained and rinsed
- 1 Cup Corn
- 1 Cup Tomato Salsa
- 1/4 Cup Water
- 1 Teaspoon Salt
- 1/2 Teaspoon Black Pepper
- 1 Tablespoon Dried Oregano
- 1 Teaspoon Ground Cumin
- 1 Teaspoon Ground Paprika
- 1 Teaspoon Ground Chili Powder -Ancho chili powder
Avocado Dressing
- 1/4 Cup Avocado -Guacamole works great
- 1/2 Teaspoon Garlic -Crushed and chopped
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Black Pepper
- 1 Lime -Juice only
- 2 Tablespoons Olive Oil
Salad
- 8 Cups Romaine Lettuce -Chopped
- 1 Cup Carrots -Shredded
Garnish
- Fresh Cilantro
- Fresh Tomatoes or Salsa
- Chopped Onions
Taco Filling
Heat a large covered nonstick skillet. Add the ground turkey and onion. Break up the ground turkey and cook until onions are translucent.
Add all of the remaining ingredients, and stir to combine. Cover and let simmer for 15-minutes.
To Assemble
Place the Romaine lettuce in a large bowl and pour all of the dressing over it, toss the salad to combine
Place a serving of salad on a plate and top with the hot taco filling. Garnish with cilantro, chopped onions, and fresh tomatoes
